Chocolate Chip Protein Cookies: Low Carb, Gluten and Sugar Free

Clean eating crunchy chocolate chip protein cookies, do I need to say more?! Unlike expensive store brought with an extensive list of questionable ingredients, these are clean and way more delicious without weird artificial aftertaste! So easy to prep a batch to fuel your workouts!

  • 1 1/4 cup almond meal
  • 3/4 cup vanilla protein powder (I use Pro-Matrix Wild WPI)
  • 1 large egg
  • 1tsp vanilla essence
  • 1/4 granulated natural sweetener like Natvia or Norbu
  • Pinch of sea salt
  • 75% Dark chocolate chopped into small chunks
  • 1/2tsp baking powder (gluten free)
  • 2tbsp grass fed butter or coconut oil at room temp

1. Preheat oven to 180 C

2. Combine butter/oil with sweetener until smooth

3. Add in all other ingredients except egg and combine

4. Add egg and mix in gently until it’s all combined and dough forms

5. Roll dough into cookie shape and place spaced apart on lined baking tray

6. Bake for around 8-10 minutes

7. Allow to cool
