Choc Avocado Protein Truffles

What could be better than avocado and coconut butter combined? Added chocolate and protein! It’s worth spending your home deposit on 😉

Low carb, sugar free, gluten free, high protein, healthy fats, paleo, vegan

I large ripe avocado

1/2 cup coconut butter

¼ cup of cacao or cocoa powder

¼ Chocolate protein powder of choice (I use Pro-Matrix wicked whey)

½ tsp vanilla essence

1.5 Tbsp maple syrup/honey or granulated sweetener of choice

Pinch of salt

Extra cacao or cocoa powder for rolling. For extra decadence, roll them in dark chocolate of choice.

1. Blend all ingredients in a food processor until mixed well;

2. Place in a bowl and refrigerate for an hour;

3. Roll the balls in cocoa/cacao power

4. Enjoy!

5. Truffles will store in fridge for a few days or in the freezer for around 3 months
