Spice up your chicken game and prep a big batch of this spicy lemon yogurt chicken! Super easy, delicious and filled with spices containing essential vitamins and antioxidants!
- 1kg skinless chicken breast or thighs
- 1/2 cup Greek yogurt
- 3tbsp juice of lemon
- 1tbsp extra virgin olive oil
- 2tsp smoked paprika
- 2tsp garlic powder
- 1/2 tsp black pepper
- 1tsp cayenne spice
- 1tsp cumin
- Zip lock sandwich bags
1. Mix all ingredients except chicken in a bowl
2. Chop up your chicken into small pieces
3. Place chicken in large ziplock sandwich bags and pour in marinade
4. Place on a tray and leave in fridge for at least 4 hrs, better overnight!
5. When ready to cook, preheat oven to 180 C
6. Take chicken out of bags and place on lined tray and bake for around 30 minutes
7. * if using chicken thighs they will need about 10 minutes longer in oven
8. Leave out to cool then eat! Store portions in sandwich bag in freezer for up to 3 months
