Quinoa, the superfood nutrition powerhouse while is not only high in protein but also one of the few plant based foods containing all nine essential amino acids! Combined with the endless benefits of bone broth, this risotto is easy, delicious and full of nutrients to glow! Being a natural source of collagen, bone broth is said to restore joints by building cartilage which degenerates as we age, support gut health, reduce inflammation, support healthy skin and immune system…i could go on buttt google it!!Now some wonderful people make their own, id love to but I also like convenience, I use a dehydrated broth powder which is so easy, just add water and bam you have your broth. It’s readily available in health food stores and online 🙂 it’s also way cheaper to buy as powder then those 2 serve packets (prices are ridiculous)
Quinoa risotto For 2- Double for 4
- 1 cup dry quinoa (white, black or red)
- 1/2 chopped onion
- 1/2tbsp extra virgin olive oil
- 1.5 cups bone broth (recommend for gut and skin health but can sub for stock of choice)
- 1 clove garlic chopped finely or 1 tbsp garlic powder
- 1 juice of a lime and zest if you can be bothered zesting
- 2tsp dill or herb of choice
- Sprinkle of black pepper
- Sprinkle of sea salt
- Add all ingredients to a large pan over medium heat
- When it starts to bubble reduce to medium heat and let simmer for around 10 minutes
- Serve up with prawns and green salad below
Prawns and green salad
- 300g Prawns (shelled uncooked)
- 120g baby spinach
- Handful of kale chopped
- Bunch of asparagus chopped
- Cottage cheese for serving
- While quinoa is simmering cook prawns with a little oil in another pan over medium heat, around 5 minutes until they turn pink
- remove prawns from pan
- Add in your greens and mix around for 3 minutes until just stating to wilt
- Serve up with a dollop of cottage cheese
