Throw back Thursday to a childhood party fav, chocolate crackles! This healthier version takes under 5 minutes and is only 3 ingredients! Quinoa is rich in protein, containing all nine essential amino acids. It’s full of fibre, iron and magnesium so these treats are really nutritious 😊
- 2 cups puffed quinoa (buy or see below for how to make your own)
- 1/2 cup desiccated coconut
- 100g dark chocolate (I use naturally sweetened brands) dairy free for vegan
- Optional add ins: nuts, seeds & dried fruit
1. Melt chocolate in a bowl in 30 second intervals
2. Once melted mix in quinoa and coconut
3. Spoon mixture into patties
Puffed quinoa
- 2 cups quinoa seeds
- Optional 1tbsp oil (gives a delicious flavour!)
1. Heat a non stick pan or pot over medium heat (add oil if using)
2. Add quinoa and spread out in a single layer
3. Continue to move quinoa around so it doesn’t burn
4. It will start popping, take out when it’s just started to brown and there’s only a few seconds between each pop
