Protein “French Toast” Topped with 2 Ingredient Frozen Yogurt: Gluten and Sugar Free (Dairy optional)

A delightful summers brekky, easy peasy, healthy and sure to satisfy any sweet cravings. It’s like summer on your taste buds! The sweetness comes from naturally from delicious fruits and berries!

Tofu French Toast – 3 serves

  • 1 block (500g) firm tofu (msg free) chopped into sticks
  • *1/4 cup honey (optional, omit if low carb) or maple syrup if vegan
  • Cinnamon
  1. If using, in a bowl let tofu marinade in honey with cinnamon sprinkled on top for 30 minutes
  2. Preheat oven to 180 degrees Celsius and place tofu on a lined baking tray
  3. Sprinkle with more cinnamon and bake for 10 minutes
  4. Flip, sprinkle with more cinnamon and bake for another 10 minutes
  5. Top with frozen yogurt and fresh fruit

*if you are on a low carb diet, skip the marinade or I’ve heard about sugar free syrups which would work

Frozen Yogurt -4 serves

Here I’ve made mango and blueberry, I make a few and store in freezer

  • 2 cups frozen fruit or berries
  • 3/4 cup plain Greek yogurt (or coconut if vegan)
  • 1 tbsp honey/maple syrup
  1. Whiz up all ingredients in a blender or food processor
  2. Eat straight away or store in freezer (you’ll need to leave it out 10 mins before eating)
