Easy Delicious Sweet Potato Fritters: 6 minutes, Grain and Gluten Free (Paleo, Whole30)

The beauty boosting nutrient dense crowd pleasures! These fritters are super easy, and delicious! They’re versatile so can be served up as finger-food, for brekky with eggs and avocado, a healthy snack or as a side to lunch or dinner! Sweet potatoes are packed with vitamin A, essential for cell growth which assists in hair, skin and nail health! Gluten free and packed with fibre with a low glycemic index to make you full. They also contain beta-carotene and vitamin C, an inexpensive way to boost immunity ☺️Makes 2 large fritters

  • 300g sweet potato
  • 1 egg
  • 2 tbsp almond meal
  • 1 tbsp coconut oil
  • Herbs and spices as desired, I use paprika

1. Spiralise or grate sweet potato

2. Squeeze out excess juice from potato by wrapping in paper towel and squeezing hard over a bowl (arm workout!)

3. Heat coconut oil in a pan on medium heat

4. Add egg, almond meal and spices to potato and combine well

5. Use you hands to make half mixture into a patty shape and add to pan, repeat with remaining mixture

6. Heat for about 2 minutes then flip and heat for remaining 2 minutes

7. Enjoy!
