Inspired to recreate a healthy clean eating version of my favourite growing to, Mummas hedgehog slice! No bake slices are so easy and great to have on hand to serve up to guests! I’ve used quinoa, the high fibre and high quality protein superfood to make you glow inside out 💚
Slice
- 300g unsalted nuts of choice
- 130g quinoa puffs or rice puffs
- 170g pitted dates
- 80g desiccated coconut
- 5tbsp honey/maple syrup or low carb granulated sweetener of choice
- 50g cocoa or cacao powder
- 1tsp vanilla extract
- 3tbsp coconut oil or butter melted
- Pinch of sea salt
Topping
- 200g dark chocolate
- 1tbsp coconut oil
- Optional Desiccated coconut for sprinkling
1. In a food processor or blender pulse together 250g of the nuts and dates, just a few pulse you do not want a fine texture
2. Add remaining ingredients except the remaining nuts and quinoa/rice puffs and mix until well combined
3. Add nuts and puffs and pulse a few times
4. Pour into a lined large baking tray and spread out evenly
5. Pop in the fridge to set
6. Melt chocolate and coconut oil in 30 seconds intervals and stir together
7. Pour on top of slice, using a flat knife or spatula to spread over evenly
8. Set in fridge
