Let me show you how meal prepping makes for easy delicious and super healthy weeknight dinners! Studies say Turmeric has major health and brain benefits! It contains Curcumin, a very powerful anti inflammatory and antioxidant. Amongst many benefits, It’s said to boost brain function and improve skin health! Curcumin is not easily absorbed by the body, the experts say that combining it with black pepper boosts the absorption of Curcumin, foods are amazing! Throw in some of my delicious broccoli chips, roasted cauliflower and kimchi for a major health and skin boost!
Turmeric Chicken :Makes 7 -10 serves (I portion it into 7 but if you want 100g chicken you can get 10)
- 1kg (approx) skinless chicken breast
- Turmeric
- Black pepper – a must to activate the turmeric!
- 2tbsp extra virgin olive oil
- Optional-any herbs you desire
1. Preheat oven to 200C
2. Line a large baking tray with al-foil
3. Drizzle with 1tbsp spoon of oil and sprinkle over turmeric generously
4. Sprinkle with a little black pepper and herbs if using
5. Flip the chicken and repeat
6. Bake for around 30-35 minutes, check it’s cooked through!
7. Portion as desired into ziplock bags and store portions you won’t eat within 2 days in freezer for up to 3 months
To assemble bowl
- 1 serve paprika broccoli chips found at Smoked Paprika Chips
- 1 punnet Cherry, Roma or Solantra tomato’s
- 30g kimchi or sauerkraut
- Roasted cauliflower (below)
Cumin roasted cauliflower – 2 serves
- 500g frozen or fresh cauliflower (I use frozen, so cheap and convenient!)
- Cumin
- Black pepper
1. Preheat oven to 200C
2. Line a tray with al-foil
3. Pour cauliflower over pan in a single layer
4. Sprinkle with cumin and black pepper
5. Cover well with al-foil and bake for 30 minutes if cauliflower was defrosted. If frozen bake for 1 hour
6. Portion into two serves and put in ziplock containers
7. These freeze perfect!
