Sweet potato is the low GI sugar alternative which makes sweet treats delicious and fudgy! Sweet potatoes are packed with vitamin A, essential for cell growth which assists in hair, skin and nails health! Gluten free, packed with fibre to make you full and have a low glycemic index, sweet potatoes are amazing! They also contain beta-carotene and vitamin C, an inexpensive way to boost immunity!Let’s zest without a zester, does anyone actually own a zester?! With a normal vegetable peeler grate the orange as fine as possible. Chop up into find pieces with a sharp knife, easy!
Ingredients
- 1 large sweet potato (about 1 cup when cooked/puréed)
- 2 tbsp coconut flour
- 1/4 cup Protein Powder (I used Pro-Matrix Wicked WPI) or almond meal
- 2 tbsp cacao or cocoa powder
- 3 eggs
- 50g dark chocolate chopped (I use unsweetened)
- 1/2tsp baking powder (gluten free)
- 1tsp vanilla extract
- 1/2tsp cinnamon
- Pinch of sea salt
- 2tbsp nut butter of choice
- 2tbsp grass fed butter or coconut oil softened
- 1/3 cup of granulated sweetener (I use natvia)
- 1-2tbsp zest of orange (reserve other half for Candied oranges!
- 1 tbsp of orange juice
1. Chop sweet potato into small chunks and steam on medium heat in a pot with lid on for around 10 minutes until softened
2. Purée sweet potato in blender or with hand mixer
3. Preheat oven to 180 C
4. Combine dry ingredients except chocolate in a bowl and mix well
5. In another bowl combine nut butter, butter/oil and the sweetener, whisk well until creamy
6. Add eggs and vanilla and combine well
7. Make a well in middle of dry ingredients and pour in egg mixture, add sweet potato purée, orange juice and zest
8. Mix gently until well combined
9. Add chocolate and mix gently through
10. On a lined tray, bake for around 20 minutes
11. Top with Candied orange slices and enjoy! (Recipe below)
Candied Oranges
- 1/2 the unpeeled orange you just zested
- 3/4tbsp honey/maple syrup or granulated sweetener
1. Preheat oven to 190 C
2. Chop the orange half into slice and place on lined baking tray
3. Drizzle with honey/maple or sweetener
4. Bake for 20 minutes
5. Serve on top of brownies
