This meal is the perfect balance of protein, healthy fats and complex carbs, I love it at brekky but is also a great dinner/lunch. You have to try poaching salmon in coconut cream, it feels like a tropical holiday 😍 Basmati rice is higher in fibre and nutrients plus has a lower glycemic index than other rice. Coconut poached Salmon
- 2 salmon fillets (I like skin on as the Skin is so nutritious!)
- 1/2 lime – use remaining half for rice (below)
- 200ml canned coconut cream
- Sweet potato noodles recipe at Sweet Potato Noodles
1. Preheat oven to 180 C
2. Place coconut cream and juice of 1/2 the lime in a pan over medium heat
3. Place the salmon on a lined baking tray
4. Once the cream starts to simmer pour it over the salmon
5. Cover with foil and bake for around 10 minutes
Coconut lime rice
- 100g dry basmati rice
- 1 cup water
- 1/2 cup coconut cream
- 1/2 lime
- Pinch of black pepper
1. Rinse and drain rice in a bowl
2. Place all ingredients in a pot over medium heat until it starts to boil
3. When it starts to boil reduce to a low heat, cover with a lid (or I use a smaller pan as I broke my lid 🙊)
