For the dark chocolate I love to use my homemade raw chocolate found at Raw Chocolate
When I’m too lazy to make my own choccy, I love and highly recommend Pumpy Jackson’s range of creamy chocolates which are 100% natural sweetener with monk fruit!
Makes around 12
- 3/4 cup almond flour
- 1/2 cup vanilla protein powder (or 1/2 cup more of almond flour) I use Pro-Matrix Wild Whey
- 4 tbsp nut butter of choice
- 1tsp vanilla essence
- 2 tbsp honey/maple syrup or granulated low carb sweetener of choice -may need to add more milk if using granulated
- 4 tbsp milk of choice (I use almond)
- 30g dark chocolate chunks (I love Pumpy Jackson naturally sweetened Choc!)
- Optional: Additional 150g dark chocolate for coating
- Mix all ingredients together in a heat proof bowl until forms a dough, use more milk if required
- Microwave on high for 30 seconds so chocolate just starts to melt
- Stir through so semi melted Choc is spread through
- Roll into balls and enjoy
- If coating, melt dark chocolate in 30 seconds intervals in microwave. Dip in balls and leave to set on lined tray
