Chocolate Peanut Butter Stuffed Pancakes: 4 ingredients, gluten and sugar free (and delicious!)

Breakfast never tasted so good as these Chocolate peanut butter stuffed pancakes which are so simple to whip up in minutes! Just 4 ingredients, sugar and gluten free, enjoy!

I’ve been making this recipe using just bananas and eggs for years, mayvers inspired me to add its peanut cacao spread to the mix, original recipe found at http://mayvers.com.au/recipes/banana-choc-paleo-pancakes/

I omitted the baking powder and add 1tbsp of almond meal, it’s not necessary but I have found makes pancakes more stable πŸ™‚

For one serving

  • 1 ripe medium banana
  • 2 eggs
  • 2 tbsp Mayvers organic peanut and cacao spread πŸ’šπŸ’š (or no sugar chocolate spread of choice)
  • 1tbsp almond meal (optional, makes pancakes more stable)
  • Sprinkle of cinnamon as desired
  • 1tsp coconut or extra virgin olive oil

1. Mash up banana in a bowl

2. Add in remaining ingredients and mix until combined

3. Over a medium heat melt oil in a small pan, add half the batter and cook then flip until cooked through

4. Repeat with remaining batter

5. If you have one (or you should totally get one, best!) cook in pancake maker!

6. Top as desired

I love mine topped with more Mayvers Peanut Cacao spread and defrosted frozen pitted cherries πŸ’
