Banana and Maqui Vegan Muffins: Full of Vitamins, Antioxidants and Potassium for Glowing Skin (Gluten and Sugar/Sweetener Free)

The super powers of banana and Maqui berries combine in such a delicious way no sweetener is required for a grab and go snack that’s so sweet and improves your skin health! Studies suggest Maqui berries possess the highest quantity of antioxidants found in nature. Said to be contain the most anti ageing and anti inflammatory properties than other berries. Also touted as a metabolism booster, diabetic aid by improving blood glucose and immunity booster as well as containing loads of vitamins for skin health! Bananas are not only good for health, they are great for your skin as they are packed with vitamins and potassium!

I use Loving Raw Organic Maqui Powder, an ethical Australian owned company which produces certified organic chocolate and other superfoods…try their chocolate, oh my gosh delicious!!

Makes 7 muffins

  • 90g almond meal
  • 5 medium ripe bananas
  • 30g Maqui powder
  • 1tsp baking powder
  • 1tsp cinnamon ground
  1. Optional-handful of pomegranate seeds or dried unsweetened cranberries

1. Preheat oven to 180 C

2. Mix all ingredients together in a large bowl mashing in the banana

3. Bake for around 15 minutes

4. Leave out to cool

5. Store in fridge for a week or freezer for up to 3 months
