A big batch of cookies and protein balls in under 10 minutes! Using superfoods baobab and beet powder, they are chocked full of goodness! The cookies combine cacao and almonds which are full of Vitamin E which is know to boost skin health and prevents against wrinkles! Baobab is rich in vitamin C, great for glowing skin and immunity 💕

Red Velvet Protein Cookies
- 3/4 cup almonds
- 1/4 cup of Protein powder of choice (I use Pro-Matrix Wicked Whey WPI)
- 1 cup pitted dates
- 2tsp beet powder
- 2 heaped tbsp cacao or cocoa powder
- 1 tbsp honey or maple syrup
- 1 tbsp nut butter of choice
- 1/2 tsp vanilla essence
- Pinch of sea or himilayan salt
1. Blend all ingredients except almonds and chocolate
2. Once combined, add almonds and pulse. If the mixture isn’t combining well add 1-2 tbsp water
3. If you want to add the chocolate to the mixture stir in now
4. Line a tray with baking paper. Use a tablespoon to scoop out portions to shape into cookie shape.
Baobab Protein Balls
- 1 cup nuts (I like cashews)
- 2 scoops vanilla protein powder
- 1.5 cup desiccated coconut
- 1tsp vanilla essence
- 2tsp baobab powder
- Juice of 1/2 lemon
- 1tbsp coconut oil melted
- 1 tbsp honey/maple syrup or low carb granulated sweetener like stevia
- Pinch of sea salt
- Desiccated coconut for rolling
1. Blitz all ingredients together in food processor or blender
2. Roll into balls and roll in the extra desiccated coconut
3. Store in fridge or freeze for longer term
