Cherry Cheesecake Fat Bombs: Keto Diet Clean Easting Dessert

With dessert this good, is keto/Low Carb really a diet?! For all you keto dieters or just delicious clean treat lovers, fat Bombs make a simple snack! Packed with healthy fats, vitamin C, antioxidants and anti-inflammatories, you can feel good about these cheesecakes 😍

  • 1/2 cup frozen cherries (defrosted) or you can use berries of choice fresh or frozen
  • 150g cream cheese
  • 50g Butter (grass-fed)
  • 1tsp vanilla extract
  • 2 tbsp granulated sweetener
  • 50g dark chocolate (I use refined sugar free brand)

1. Melt dark chocolate in 30 second intervals in microwave

2. Pour melted chocolate into silicon cupcake mould to cover around 1/2 cm in height

3. Set chocolate in fridge for around 30 minutes

4. While that’s setting take you Butter and cream cheese out of fridge to warm to room temperature

5. Either in food processor or working your arm muscles whiz or mash up cherries

6. Mix in all ingredients and pour on top of the chocolate bases

7. Place in freezer to set

8. Remove the silicon liners and store in freezer in a airtight container or sandwich bag
