Homemade Peanut Butter French “Toast”: Low Carb, Gluten and Sugar Free (Vegan)

Making your own nut butters is so super easy and the add ins are endless! I love mine on this protein French toast which is filled with protein without any refined sugar!

Tofu French Toast – 3 serves

  • 1 block (500g) firm tofu (msg free) chopped into sticks
  • *1/4 cup honey/maple syrup for vegan (optional, omit or use sugar free if low carb) or maple syrup if vegan
  • Cinnamon
  1. If using, in a bowl let tofu marinade in honey/maple with cinnamon sprinkled on top for 30 minutes
  2. Preheat oven to 180 degrees Celsius and place tofu on a lined baking tray
  3. Sprinkle with more cinnamon and bake for 10 minutes
  4. Flip, sprinkle with more cinnamon and bake for another 10 minutes
  5. Top with peanut butter and drizzle with honey/maple syrup

*if you are on a low carb diet, skip the marinade or I’ve heard about sugar free syrups which would work

Homemade Peanut Butter

  • 500g raw peanuts
  • Optional pinch of salt
  • Optional 1tbsp peanut oil
  1. Roast peanuts in oven for 10 minutes, roasting is the key to a delicious flavour!
  2. Process nuts in food processor until you have a creamy butter, stopping on Occassion to scrape the nuts around
  3. They key is to process it for longer so it makes it super creamy
  4. Store in jar
