Tempeh is a nutty flavoured fermented soy packed with Protein, nutrients and probiotics for gut and skin health! Even those who are anti soy (hello paleos) agree that the fermentation of tempeh eliminates the anti/nutrients said to be contained in tofu, plus it tastes better!!
Baba Ganoush
1 medium Egg plant chopped into slices
Clove of garlic grated (can substitute with minced garlic)
2 tbsp tahini
Juice of 1 lemon
1 tsp olive oil for roasting (extra virgin!)
Pinch of sea salt
1. Preheat oven to medium heat
2. Roast egg plant topped with olive oil and salt for 5 mins, turn and roast for another 5 mins
3. Optional: peel away skin, I keep mine on cos there’s lots of nutrients in the skin!
4. Place all ingredients in blender/food processor and combine
5. Serve up or store in sealed jar in fridge for a week
For the burger-1 serve
100g organic tempeh (some come in flavours but check the ingredients are ok!)
2 large portobello mushrooms
Handful of kale or other dark leafy greens
Tomato
Spices of choice (I use turmeric and black pepper)
- Preheat oven to 200 Celsius
- Place cut tempeh onto lined baking tray and sprinkle with spices
- Bake for 10 minutes
- Flip the tempeh and sprinkle with more spices
- Place mushrooms and kale on the tray and bake for a further 10 minutes
Assemble burger and add Baba Ganoush
I also dip Fine Fettle Flats (at grocery store) which are quite delicious! They are gluten free, organic and vegan 🙂
