Buttery Shortbread Cookies: Low Carb, Sugar and Gluten Free

Treat your lover or loved ones with these buttery shortbread cookies ๐Ÿ’• Great for Valentine’s Day, bdays or just cos! Taste so close to store brought you wouldn’t guess they were completely clean! If you don’t have a lover, treat your loved ones…or enjoy with your cat (disclaimer DO NOT feed these to your cat or dog!)

Low carb, sugar free, gluten free

Ingredients

  • 2 cups Macadamia Flour (grind up 2.5 cups unsalted macadamias) (you can also use another nut flour)
  • 1/2 cup grass fed butter
  • 1 large egg
  • 1/3 cup Stevia baking blend of choice (I used natvia for these)
  • Pinch of Himalayan salt
  • 0.5 tsp vanilla essence
  • 50g quality dark chocolate
  • Freeze dried strawberries ground

1. In a bowl add flour, stevia, vanilla essence and salt

2. With your hands rub in the butter

3. Add egg and mix with spoon. Then use your hands to knead it all together

4. For best results place the dough in cling wrap and chill in fridge over night (but if you’re impatient you can bake the dough straight away!)

5 portion dough into log shapes onto a tray lined with baking paper, then flatten with hands, I used a rectangle cookie cutter to make the shape before baking

6. Bake on medium setting for 10-12 minutes

7. Leave to cool

8. Grind up freeze dried strawberries in blender/food processor

9. Melt chocolate in microwave in 30 second intervals

10. Dust with strawberry powder and store the remaining for use on other delicious recipes

11. Cool in fridge until choc is firm

12. Enjoy with your lover, loved ones or your cat ๐Ÿ˜‰
