A high protein, low carb breakfast full of healthy fats and nutrients, buttery scrambled eggs are the best way to start your day! Single serving and meal prep options for busy mornings! This can even be taken to work in the morning and heated up. Low carb, sugar, gluten and grain free.
For one serving (double for meal prep in one pan)
- 2 large eggs
- 60g baby spinach
- 250g button mushroom
- 1/2tbsp butter or oil to grease pan
- 1tbsp Butter (or coconut oil) melted
- Herbs and spices as desired (I used pepper and dill)
- Crack eggs in a bowl and whisk in melted butter
- On a medium heat melt butter in pan
- Add eggs and leave for 3 minutes, sweep slowly by pushing eggs to middle until cooked through
- In a separate pan cook mushrooms and spinach or if meal prepping do the following:
- Add in mushrooms and spinach and sweep eggs slowly to the middle until cooked through
- Serve on plate or divide into two airtight containers
- If meal prepping, store containers in fridge for up to 3 days or you can freeze it for up to 3 months!
- For meal prep, defrost and cook in microwave for 1-2 minutes
- Top with canned salmon or whatever you like, chicken, tuna, smoked salmon etc
