Cashews turning into a delicious cream, such magic! Serve up this easy no bake slice which captures the flavourings of a true Aussie summer, mango and coconut!
Raw base
- 1 cup pitted dates
- 2 cups nuts of choice (I used almonds)
- 1tbsp nut butter of choice
- 1tbsp honey
- pinch of sea salt
- Blitz all ingredients together in a pan and press into a lined baking tray
Mango Topping
- 2 cups of raw cashews, soaked for at least 4 hours (overnight is best)
- 1/2 juice of lemon
- 2 tbsp honey
- 1 tsp vanilla
- 1 chopped mango
- 1/3 cup of coconut cream (full fat)
- 1/2 cup desiccated coconut (optional)
- Drain cashews and blend up all ingredients but the mango and desiccated coconut in a blender or food processor
- Once cream is formed mix in mango (as much as desired) with a spoon
- Pour onto slice base and top with a sprinkle of desiccated coconut and more mango
