Raw Mango Slice

Cashews turning into a delicious cream, such magic! Serve up this easy no bake slice which captures the flavourings of a true Aussie summer, mango and coconut!

Raw base

  • 1 cup pitted dates
  • 2 cups nuts of choice (I used almonds)
  • 1tbsp nut butter of choice
  • 1tbsp honey
  • pinch of sea salt
  1. Blitz all ingredients together in a pan and press into a lined baking tray

Mango Topping

  • 2 cups of raw cashews, soaked for at least 4 hours (overnight is best)
  • 1/2 juice of lemon
  • 2 tbsp honey
  • 1 tsp vanilla
  • 1 chopped mango
  • 1/3 cup of coconut cream (full fat)
  • 1/2 cup desiccated coconut (optional)
  1. Drain cashews and blend up all ingredients but the mango and desiccated coconut in a blender or food processor
  2. Once cream is formed mix in mango (as much as desired) with a spoon
  3. Pour onto slice base and top with a sprinkle of desiccated coconut and more mango
