Low Carb Protein Scones

At 173 calories, with 10g of protein and only 5g of net carbs (2.5 being fibre!) these delicious buttery scones are a great pre or post workout treat! Full of nutrients to nourish your body and natural sweetness without sugary high and low πŸ’•

125g almond flour

50g vanilla protein powder (I use Pro-Matrix Wild Whey Organic Vanilla Bean)

3tbsp coconut flour

1 egg

1/4 cup almond milk

1/4 cup stevia granulated baking blend (you can use honey/maple syrup, carbs will be increased)

3tbsp butter (or coconut oil)

1tsp baking powder (gluten free)

Pinch of sea salt

2tsp lemon juice (this helps milk have effect of buttermilk, lightens batter)

1tsp vanilla essence or powder

1/2 – 3/4 cup add ins of choice (I used white choc chips and dried organic cherries)

1. Preheat oven to 180 celcius (350F)

2. Sift flours into a bowl (not essential but helps lighten batter)

3. Add other ingredients except your milk and adds in of choice and mix together

4. Add a milk slowly, a bit at a time until the dough is just form, you may not need it all!

5. Gently stir in add ins

6. Form into scone shapes and place in lines baking tray

7. Brush with a bit of milk

8. Bake for 15-20 mins and leave out to cool
