Raw Chocolate: No coconut oil!

Celebrate World Chocolate Day by making your own! Because who doesn’t love chocolate! Making your own chocolate is such a satisfying way to indulge those cravings as well as being a great gift idea for your special humans. There’s a lot of recipes using coconut oil, I respect their creations but it’s just not for me! I do not particularly like coconut though so each to their own!

Make a big batch then use to melt in pretty moulds to look like you’ve gone to a bigger effort than you really have 🙊 you can also add flavours to the chocolate using superfood powders, vanilla essence, coffee and sea salt. I personally love adding lucuma powder for a caramel taste!

Dark Chocolate- makes about 600grams

300g Cacao Butter

3tbsp honey/agave or maple syrup or if you are on low carb diet, 2tbsp granulated sweetener of choice)

170g cacao or cocoa powder

Pinch of sea salt

1. Melt cacao butter in a saucepan over medium heat

2. Add in other ingredients

3. You can also add in optionals like superfood powders, vanilla powder/essence or nuts

4. Pour into a lined baking tray and leave it to set in fridge for 30 mins

5. Remove and chop it up

6. Store in dark cupboard until use

7. Please store in fridge if it’s over 30 degrees in your home, I don’t have aircon ok hehe

White Chocolate

300g Cacao Butter

300g coconut butter (melted in microwave first!)

3tbsp honey/agave or maple syrup or 2tbsp granulated sweetener of choice

1tsp vanilla essence

Pinch of sea salt

1. Do as above with dark chocolate, melt cacao butter before adding other ingredients

To make into moulds melt you raw choccy in microwave in 30 second intervals, add in powders like raspberry, Lucuma or blue butterfly pea powder to make pretty colours and flavours! Pour into moulds and leave to set in fridge for around 30 mins
